The basic concept of gelato is, particularly in Sicily, ice cream made mostly with milk. Occasionally though you will come across crema, the altogether richer style ice cream of northern Italy.
Based on a rich custard, our crema siciliana ice cream has all the flavour of oranges and lemons but without the sharpness usually associated with citrus. Instead, the flavours are enveloped in a comforting creamy custard and shot through with citrus syrup and flecks of candied peel. You could say it is something of a Danieli specialty.
Crema Siciliana is naturally a soft textured ice cream. Because of its richness it has a slightly higher sugar content. This, and the syrup swirled through it, give it this soft super creamy texture.
